Chocolate Honey Almond No-Bake Granola Bars stacked.

A typical granola bar is loaded with sugar, but it is easy to make your own (healthier) bars, especially if you don’t have to bake them. A combination of oats, crispy brown rice cereal, and almonds provides these bards with a soft, yet crunchy, texture. Add some chocolate chips and cocoa honey to mix, and you have a sweet, satisfying, wholesome treat in no time.

Ingredients

  • 2 cups gluten-free rolled oats (not quick cooking)
  • 1 cup crispy brown rice cereal1/2 cup unsalted, roasted almonds, roughly chopped
  • 1/2 teaspoon kosher salt
  • 1/4 cup unsalted butter
  • 1/3 cup Asheville Bee Charmer’s Cocoa Infused Honey
  • 1 heaping tablespoon dark brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup mini semisweet chocolate chips

Instructions

Step 1: Grease an 8×8 inch pan with nonstick cooking spray and set it aside.

Step 2: In a large bowl, combine the oats, brown rice cereal, almonds, and salt, and mix well.

Step 3: In a small saucepan, heat the butter, honey, and brown sugar over medium-high heat until the mixture begins to boil. Reduce the heat to low and cook the mixture until it registers 234 degrees Fahrenheit on a high-heat instant-read thermometer. Remove the pan from the heat and stir in the vanilla.

Step 4: Pour the honey mixture over the oat mixture and stir until everything is well coated. Carefully stir in the chocolate chips (they will melt a little bit).

Step 5: Pour the granola into the prepared pan. Place a piece of parchment paper over the granola and press down so that it’s evenly and firmly packed. Refrigerate for 1 hour, or until the granola is set.

Step 6: With a sharp knife, cut the granola into eight (4×2 inch) bars. Keep them refrigerated until you’re ready to eat. They can be stored in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 6 months.
