Perhaps our most exotic and complex honey, Tasmanian Leatherwood Honey has traveled to us all the way from the rainforests of western Tasmania. The taste of Leatherwood Honey begins with a floral flavor followed by a slightly sour finish. It is a wild organic honey and one of the most sought-after honeys in the world.
During the Tasmanian summer, bees pollinate the beautiful blooms of the Leatherwood flower and the beekeepers of the Tasmanian Honey Company actually camp in the rainforest wilderness to hunt and harvest the resulting wild honey. The beekeepers are careful to collect only surplus honey to ensure these wild bee colonies will continue to flourish.
This Leatherwood Honey is set with an ultra-fine crystal structure that allows for a buttery and spreadable consistency at room temperature.
