From Lava Flows to Honey Flows

After a lava flow the ‘Ohi’a lehua tree is the first to take root. It’s said that the minerals in the volcanic rock combined with the salty ocean air contribute to the salty mineral taste of Lehua Honey. This honey tends to crystallize fairly quickly due to the high glucose-to-fructose ratio. Some prefer it crystallized as it adds to the salty quality.
