Baked Chicken Stuffed With Honey and Blood Oranges

Ingredients

  • 2.5 lb whole chicken
  • 2 whole blood oranges peeled, cut into pieces
  • 1 cup of Cranberry Honey

Instructions

Cut peeled blood oranges into pieces and soak in Cranberry Honey for one hour. If your chicken is larger than 2.5 lbs then adjust the amount of blood oranges accordingly.

Stuff the honey and blood orange mixture under the skin of the  chicken breast and thigh meat.

Bake the whole chicken at 400 degrees for one hour.

Use foil tented over the chicken for the first 30 minutes so not to burn the skin (You definitely need to be careful when cooking with honey, because it can burn quickly).

Remove the foil and keep an eye on the bird until it browns.
