Bee sweet to yourself this winter, or to your honey this February, with delicious honey-inspired desserts! Winter is a great time to slow down and spend some time experimenting with new culinary flavors and approaches. This month we bring you a healthy dessert from Chef Carrie Schloss and the Bee Charmer Cookbook that features our own cocoa-infused honey.
This cocoa honey mousse recipe also features avocado! Not only are avocados filled with nutrients and healthy fats, but their creamy, buttery texture also makes them a fat replacer in a lot of recipes. Of course, they taste great in guacamole, on salads, and on toast, but they taste even more delicious when mixed with chocolate and honey. This mousse is quick and easy, and it’s probably one of the healthiest chocolate desserts you’ll ever eat.
2 ripe avocados, peeled and pitted
1/3 cup dates, pitted and chopped into 1/4th-inch cubes
1/2 cup unsweetened cocoa powder
1/2 cup Asheville Bee Charmer’s Cocoa-Infused Honey
1/2 cup water, divided
Place the avocados, dates, cocoa powder, honey, and 2 tablespoons of the water in a blender. Blend on high, making sure the avocados and dates are fully incorporated. Slowly add the rest of the water, as needed, until the mousse is fully emulsified. It should take about 5 minutes of blending time to get a light and fluffy mousse.
Transfer the mousse to an airtight container and refrigerate until you’re ready to serve. It can be stored in an airtight container in the refrigerator for 4 to 5 days.
