Our Chicory Honey derives from the pollination of chicory blossoms in the Pacific Northwest. Blooms extend from late June until October, being present when many other plants are not producing flowers. Chicory Honey has a nice caramel taste. Many people are familiar with the strong, rich taste of chicory coffee, where the dried ground roots are added to ground coffee beans to enhance the flavor. The leaves can be eaten like celery. The roots and leaf buds can be boiled and eaten, and taste like parsnips. The plant is a good source of folic acid, potassium, and Vitamins A, B, and C. The blue flowers can make a clothing dye, producing a variety of yellows and greens.
